Green Bean Casserole with Goat Cheese – by Janet


We first enjoyed this at Christmas Dinner 2013 in Denver while visiting Kim & Seth. I am always looking for new and wonderful ways to prepare Green Beans, which is one the Sasquatch’s favorite vegetables. What I love is that this version is much lighter than the green bean casserole we all know and love from Thanksgiving which calls for cream of mushroom soup and fried onions on top. Instead, replace the mushroom soup with fresh mushrooms and dollops of goat cheese. The combination of sweet onions, with the creamy and tangy goat cheese made for a beautiful and complex flavor.

The onions in this recipe are red, caramelized onions sweetened with brown sugar instead of fried onions. This recipe is quite simple but does require that you nanny the caramelized onions. It takes a while but it is well worth the effort!

I took a snapshot of the recipe off Kim’s refrigerator and made it the day after we returned from Denver. This is definitely going in our family recipe book. I am sure I will make it many times over. If you make a lot, the casserole is easy to reheat in the microwave and tastes delicious as a leftover.
